Food, you got me again.

For the last couple of weeks I’ve really been off the wagon with my über strict meal planning stuff, and the reason?  It was über strict.  Rules were made to be broken, right?

That’s not the whole reason though.  I was also adjusting to a new work schedule.  I recently took on a lot more work than I’ve been used to since losing my job last September.  Things were pretty relaxed around here for a while, but no longer. Ever since my babies were born I’ve struggled with running my own business, for various reasons.  The main goal was to get it to a place where I could make as much money on my own as I’d make working for a “real” company.  It’s been over 5 years since I’ve been able to achieve that, but it’s finally happening, and I am so happy about it.

While that’s all fine and good, it’s been clear that all those fancy recipes with tons of steps and ingredients were a little too tricky for someone who’s been furiously working at a computer all day, with screamie kids working my nerves.  So I’m going to take the next few days to sort of regroup and figure out a different style, so we can all eat healthy with minimal nerve frazzling.  I’ll be back in touch soon once I can wrap my head around it.

In the meantime, anyone have some good, easy, healthy recipes to share?
