Just made a new version of my recent favorite “Vegetarian Meatballs, a.k.a. Energon Spheres,” with black beans and some Mexi-flave. They are so good, even better than the original!
For this version, follow the same method as for regular energon, omitting the rosemary and replacing it with the following:
1 teaspoon dried oregano
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon ground cinnamon
zest and juice of one lime
Replace the lentils with a can of black beans, rinsed, replace the ketchup with jarred salsa, and replace the breadcrumbs with crushed up tortilla chips. Omit the walnuts and think about replacing the cheese with something more Mexican-y. I left it out altogether but queso fresco or chihuahua would work, or even monterey jack or sharp cheddar.
These were such a yummy and healthy lunch with a little cheese crumbled on top and a half an avocado on the side with some fresh lime squeezed over…
I’m thinking about putting the leftovers into a wrap! So delicious I can’t wait to eat them again!
